Pear, Mint And Ginger Granita

Ingredients

  • 8 Angélys pears
  • 1L ginger beer or ginger ale
  • 500ml soda water
  • 4 stems of mint
  • 2 oranges

Method

For the Ice Cubes

Wash and quarter 4 pears and remove the seeds and put through a Juicer or blend finely in a food processor.  Add 150ml of the ginger beer to the pear juice. Remove the leaves from 1 stem and place 1 leaf into each ice block mold. Pour in the pear & ginger beer mixture and freeze for at least 4 hours or overnight(overnight is best).

For the Juice

Wash and quarter 4 pears and remove the seeds and put through a Juicer or blend finely in a food processor. Pour the juice into the serving jug and add the remaining ginger beer, soda water and the juice of one orange and stir well.Scrunch the remaining mint stems in your hands to release the aromatics of the mint and add whole into the jug.

Cut the remaining orange in half then cut widthwise into ½ cm slices and add to the jug.

Finally add the pear ice blocks from the freezer, stir again and enjoy.
